12 Desserts of Christmas: Day 5—Peanut Blossom Cookies

A great holiday cookie staple, which is also delicious every other time of the year, is Peanut Blossom Cookies. The delightful mixture of peanut butter cookies and slightly melted Hershey’s kisses fresh out of the oven are amazing.

Prep Time: 15 minutes

Total Time: 1 hour 35 minutes

Servings: 48 cookies

Ingredients

  • 3/4 cup granulated sugar, divided

  • 1/2 cup firmly packed brown sugar

  • 1/2 cup butter, softened

  • 1/2 cup peanut butter

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 3/4 cups all-purpose flour

  • 1 tsp baking soda

  • 48 kisses, unwrapped

Directions

  1. Combine 1/2 cup granulated sugar, brown sugar, butter and peanut butter in bowl. Beat at medium speed until light and fluffy. Add egg, vanilla and salt; continue beating until well mixed. Add flour and baking soda; beat at low speed, scrapping bowl often, until well mixed. Cover with plastic food wrap; refrigerate 30 minutes.

  2. Heat oven to 375 degrees Fahrenheit.

  3. Shape dough into 1 1/4-inch balls. Roll balls in remaining 1/4 cup granulated sugar. Place, 2 inches apart, onto ungreased cookie sheets.

  4. Bake 8-10 minutes or until very lightly golden brown. Immediately press 1 chocolate kiss into the center of each cookie. Remove to cooling racks.
